The Making of Cherry Garcia Oatmeal


Does this look interesting or what? Today I had the opportunity to make an oatmeal that i’ve been thinking up for several months now. I bought about 15 cherries from Whole Foods, for $2… Expensive little gems those cherries… This is what it looked like in the process. The green is… Can you guess? Avocado ๐Ÿ™‚

I must apologize in advanced, I dont have a picture of the finished product, I was too excited to eat it…

But trust, it was delicious ๐Ÿ™‚

Went 2 Months without posting?!

Hey all,

I went 2 months without posting anything. That’s the truth and I must say it. I decided that since I was in the homestretch, or “the last mile” of earning my Bachelor’s Degree, I would refrain from posting, and channel most of my energy into my degree. After 3 long, hard, and brain-busting years, I was able to cross the finish line, so thanks God, for allowing me to reach this goal in life!!

With that said, stay tuned to my next post. I am able to write again, something other than case study’s and spreadsheets ๐Ÿ™‚

Last week, I decided that since I love Baked Oatmeal so much, I would have a different one every day of the week.

I posted the oatmeals, and I must say, I thank God for the ability to have done it. It was time-consuming! But it was worth it.

They were all delicious, so much so, that I am not able to pick a favorite ๐Ÿ˜ฆ

I’d like to do another week, exploring with all new different ingredients, but that would need to be at a later time, when I have more money, time, & patience!

My son, Aaron, did not participate in my week of oatmeals. He does not eat as much food as he should, instead he sucks out all of my calories…I seriously need to start weaning!ย 


Apple Pie Steel Cut Oatmeal

Alas, 7 days of 7 different oatmeals are done. This is my last one, a day late, but oatmeal is oatmeal! This oatmeal tasted like a bowl of apple pie. It took me about as much work as an apple pie would, though! This one was made with steel cut oats, which take forever to cook :/ But I had to try it.ย 

Since I now have cooked steel cut, I will attempt making a baked version with the steel cut. We will see how it comes out!

The recipe is here. Thanks Lauren! I must say, Lauren’s version of this oatmeal looks so much more delicious than mine. Although, I have to admit, my version tasted pretty good (as I’m sure Lauren’s did!).



I did do something different. Since I’m all about consistency, I took half an apple and blended it along with the liquids. This allowed me to omit any sweetener! How awesome is that?ย 

My Meal Plan — UNCOVERED!

I’ve been struggling with an eating disorder for about 2 years now. After being rescued from a disastrous relationship with my son’s father, my son and I left the home we shared, and moved in with my parents.

(There is a true miracle behind the separation that God allowed in my life, I’m blessed to be alive. And Jesus Christ is the reason, that’s another post!)

I was left with a shattered self-esteem, the overwhelming duty of being a mom, and I turned to food for comfort. No matter how many PB & Banana Grilled Sandwiches with Coffee I had, no matter how many cookies, no matter how many bowls of cereal, I still felt anxious and distraught with my situation.

After many hours of prayer, reading, and trials-and-error, I came to the conclusion that if I want to control what I eat, I need to be at peace, given by the Holy Spirit, work out very, very, very, often, and take a nap (or try to) everyday.

I decided to take this week and document everything I ate. I’ve done this many times before, but I took a different approach this time. I put to use my spreadsheet-making skills acquired as a Business Student [almost graduating with a Bachelor’s Degree BTW (GOD WIILLING)].

Here is what I ate this past week, nothing hidden, nothing uncovered. This is a pivotal moment, my friends. Not once did I ever think I would publish everything I ate.

Taking a look at this, you might have thoughts of your own. I’d love to hear them so please leave comments!

-Obviously, I love Oatmeal, Coffee, Peanut Butter & Bread, & Granola Bars

-Crackers & Cheese, Man, Crackers & Cheese…

Baked Oatmeal #6 – Banana, Coconut, PB Oatmeal

Today, I had an overnight oatmeal planned and a very ripe banana to add to it. However, I decided to make a baked version, due to the fact that I have a test today, and I know the filling potential a baked oatmeal has on me!

This is a Banana, Coconut, PB Oatmeal made after a failed attempt at fasting.ย 



It was like eating a bowl of banana bread. Delicious Banana Bread.ย 

On top, I dollop some WALLABY Vanilla Yogurt, and add a splash of milk to cool it down.

If I were eating this for a late lunch or dinner, I would add chocolate chips!


Oatmeal #5 – Chocolate Chai Spice & Cherry Swirl Baked Oatmeal

Today, I made a chocolate-chai spiced oatmeal! (It’s in the oven as we speak)

The inspiration came earlier in the week. I had banana in my oatmeal 2 days in a row, and was considering another day of banana-infused oatmeal. Then I thought, I must give it a break! I love it so much but don’t want to exhaust the no-fail banana baked oatmeal base!

This Oatmeal could be considered my most creative. I used Cocoa Powder, from Whole Foods, it took me about 3 months to use it all up. Very worth the $3.44 or so I paid :), as a base, I used the most part of one egg’s white, and infused it with cinnamon & chai. Then, I swirled the Cherry Jam from a FAGE Yogurt on top. I use this instead of buying a whole jar of jam because, well, I don’t feel like spending $6.99 on a jar. It will entice me to eat more, anyway.

*Note: There’s an organic fig spread at Whole foods that I tried. It is very, very nice. & I mean very. Almost considered getting it to use in my PB & Banana or PB & Apple Sandwiches and Oatmeal, but then I regrouped & refrained from making such a purchase. I’ll stick to the free samples they have. I must try, somehow, a PB, Banana & Fig Spread Bagel Sandwich…someday, someway!
